Tonight I made a variation on their Crispy Coconut Tofu Tacos.
Warning...these are insanely good.
For my version I made a Vegan Chipotle Mayo Sauce and a Lime Red Cabbage Slaw. I bought a whole cabbage the other day and have been sneaking it into every meal. Cabbage, cabbage everywhere. And I tossed in some leftover sweet potatoes from last night's dinner. I was worried that the tofu bites would not have enough flavour, but oh my damn, I shouldn't have been worried at all. They are so freaking good. I have tons left, I'm thinking of putting them on a salad tomorrow :)
